Mineral, silky smooth and elegant.This wine is in a refined style with lots of raspberry, sweet and sour cherry notes mixed with a distinctive minerality.Evodia means perfume.This is the perfect representation of the Grenache from Aragon with its own grapes and flavors.The landscape where Evodia is grown is very special because of the height and slopes, which results in a very pure and fresh wine.
The grapes come from very old vines with an average yield of 4000kg / ha, coming from calcareous, clay and slate soils.The grapes are destemmed and not crushed.The fermentation takes place in concrete tanks for 20 days with gentle extractions.The maceration takes 7 days using the batonnage technique.In this way a more extraction is obtained and a lower grape oxidation of the grapes takes place.A small part of the blend is aged in barrels.(10% in barrels and 90% in concrete tanks).
