Merlot Barrique, a Limit Edition from Giol, is a selection of the estate's finest Merlot grapes. Malolactic fermentation takes place in small oak barrels, where the wine is then aged for 8-10 months. This gives it unmistakable oak tones, which emphasize the characteristics of the wine instead of covering them. A deep ruby red wine that tends to be purplish. Slightly grassy aromas combined with the scent of young raspberries, forest fruits and cherries. After aging, the wine acquires aromas of violets, oriental herbs, black pepper, cocoa and tobacco. Combines very well with haute-cuisine meat dishes, charcoal grilled meat, beef or pork roast, luxury poultry and game. Serve at about 20 ° C to enhance the aromas and flavors.
Manual harvest at optimal technological and phenolic ripeness, crushing-destemming, addition of cultured yeasts. Maceration for 6-7 days, followed by lees. Manual pumpover. After the first fermentation, the wine is aged and transferred to 210 liter and 500 liter French oak barrels for malolactic fermentation and aging for 8-10 months, depending on the vintage year. The different varieties are mixed immediately before bottling, carefully assessing the characteristics of the available barrels.
