Vangelis! Are you listening to me? a friend asked joyfully when a large table was set for the bottling of Chatzivariti's first white wine in 1985 in Goumenissa. That is why they decided to produce this anniversary wine, which consists mainly of Sauvignon blanc and Assyrtiko, which combines evolution with history.
Protected Geographical Indication Pales Slopes (PGI) Varieties: Assyrtiko, Sauvignon blanc
Vineyard: Linear vineyard in Bidabla Goumenissa for Sauvignon Blanc, in Filiria for Assyrtiko
Soil: sand in Bidabla (Goumenissa wine region), sandy loam in Fyliria (Goumenissa wine region)
Vinification: Pre-fermentation extraction in cold temperatures for 6 hours, alcoholic fermentation at controlled temperature, residence of the wine sur lie for 3 months with periodic stirring.
