Giol Pinot Grigio is light straw yellow with an elegant delicate nose characterized by notes of ripe pear, peach, apricot and sun-dried hay. The fresh, balanced, nicely coherent whole on the palate closely matches the aromas of the wine. Ideal in the summer for a day in the park or on the beach. But also excellent with vegetable snacks, soups and starters, grilled fish with sauce, salad of Parma ham and melon, and savory soufflés. Ideal serving temperature: 10–12 ° C.
Harvesting is done manually when the grapes are optimally ripe. They are then destemmed, pressed, the must settles and cultured yeasts are added. The wine continues to ferment on the fine lees with regular batonage.
Vittorio knows what he is doing with his organically grown fruit. He keeps some of the wine's must at 0 degrees so that he can bottle fresh wine at all times.
