Cryomaceration is used for the fermentation of 60% in stainless steel vats at a controlled temperature between 13/16 ° C for 25 to 30 days, and 40% in French oak casks with spontaneous malolactic fermentation.Here the wine continues to ferment on its own for 8 to 10 months.
