Product description
Harvesting is done manually when the grapes are optimally ripe. They are then destemmed, pressed, the must settles and cultured yeasts are added. The wine continues to ferment on the fine lees with regular batonage.
Vittorio knows what he is doing with his organically grown fruit. He keeps some of the wine's must at 0 degrees so that he can bottle fresh wine at all times. Even halfway through the year, his Pinot Grigio still tastes young and fresh; very well thought out. The packaging is 99% recyclable, the chameleon of Italian grapes.
