Cuvée Passe Temps, made from 80% Grenache and 20% Syrah, has a ripe nose of cherries and blackberries. Aromas of stewed fruit mingle with hints of leather and spice. The wine is structured, quite robust on the palate with a chocolatey and gastronomic expression. The Passe Temps cuvée is beautifully designed, reflecting the concern for quality of this domain with its legitimate ambition.
The plots, in total 50 hectares, are housed in the middle of rocks, scrubland and pine forests and follow the natural physiognomy of the place: hills, steep slopes and plains. Laurent de Besombes Singla found the way to reveal the amazing potential of this terroir. True to the grapes that love the sun of Roussillon, he creates some authentic wines, fine, elegant, full of earth are produced.
Since he took back the family farm, Laurent de Besombes has isolated the best tenements, 50 hectares in total, which bear the name Domaine Singla. He replaced herbicides, fertilizers and other synthetic products with natural materials such as horsehair, comfrey, lime, sulfur, nettle, fennel ... He revitalized the fields and worked through the seasons. Ever since in the wastelands, hedges and surrounding scrubland, the ecosystem took back its rights. The Domaine has been certified in organic farming since 2006.
