The Côte de Nuits-Villages Reserve de la Comtesse is undoubtedly one of the very best Bourgogne Blanc of the Côte de Nuits appellation. It is a complex and mineral wine. It has the structure of a Saint-Aubin with subtle floral notes. It is a wine of a very fresh terroir that gives a very fine and delicately aromatic expression. The fragrance develops in notes of fresh citrus fruit such as mandarin, lemon and grapefruit. The freshness in the nose is surprising and makes you want to continue tasting. This citrus fruit purity is complemented by balanced notes of oak and brioche.
The grapes come from the ropes of a Premier Cru Niuts-Saint-Georges vineyard. The vines are 50 years old and have developed deep root systems, which are fed by complex layers of limestone clay soils, resulting in concentrated and complex wines. The grapes are harvested by hand and carefully selected when they have reached the optimal ripeness level. After this, the grapes are carefully sorted a second time in the wine cellar, after which they are carefully pressed with a pneumatic press. The must is transferred at night in cool temperature in oak barrels from 2 to 4 years old. The fermentation happens with native yeasts that are naturally present on the skin of the grape. Here the wines are aged for 9 months after which they undergo a fine filtration and are bottled by gravity.
