This Syrah Apice has a beautiful ruby red color. On the nose it offers spicy aromas of red fruit, plum cherries and aromatic herbs. On the palate, it is powerful with soft tannins supported by good freshness.
The Apice comes from grapes that are "on top" of the 'Canonici vineyard. Matured for two and a half years in the bottle, Apice is only produced in vintage years that Stefano considers exceptional, which is why this wine represents their "family silver".
Not a dime a dozen from a company like Stefano Amerighi's. It covers a total area of approximately 14 hectares, 8.5 of which is intended as a vineyard. The planting was preceded in 2002 by a thorough geological survey in 2002. The study indicated a very suitable soil for viticulture in this part of Tuscany. Quantity does not matter here; it's all about quality. That is why the yield is low with approximately 4,000 kilos of grapes per hectare and no more than 600 grams per plant. The work in the vineyard follows the rules of biodynamic agriculture. Defense against disease is done only with copper and sulfur, which is distributed in minimal quantities. Thanks in part to the use of natural infusions and biodynamic preparations, any form of fertilization is avoided and no plowing is required in winter. All this is done to mature a healthy bioculture and to make a vinification completely free of corrective and chemical products.
After the upset, some of the grapes are left un bruised and others are trampled on. Fermentation takes place in concrete barrels, without the use of pumps anywhere. Fermentation takes place automatically, without selected yeasts, sulfur or temperature control. Education is carried out in wood and cement for 14 months, while bottling is carried out without prior filtering or stabilization.
